Leblebi is a snack made from roasted chickpeas, popular in middle east, north Africa and Sicily. It is known to be an ancient snack with high nutritional values. There are 7 stages that the chickpeas must go through to give it its distinct taste, texture and easy digestion. These stages include:
1. cleaning and grading
2. soaking
3. tempering (preheating and resting)
4. boiling
5. resting
6. roasting
7. dehulling
