Ingredients:
For making thin batter for khandvi sheets or rolls
½ cup Besan/Chick pea flour
½ cup curd
1 cup water
1 teaspoon salt
1 green chilli
1 small piece of ginger
½ teaspoon haldi / turmeric powder
2 pinches of hing/ asafetida
For tadka or tempering
5-6 green chillies
10-15 curry patta or curry leaves
1 tablespoon rai or mustard seeds
Handful of coriander leaves
1 tablespoon any redined oil
2 tablespoons grated coconut
Method:
1. In a big bowl add chick pea flour and curd and mix well.
2. Add water and mix well
3. Add asafetida, salt, turmeric and mix well.
4. Now add paste of green chilli and ginger and mix well
5. Now sieve this mixture/batter and transfer to a pan/kadai
6. And before keeping this pan on flame, first Greece few steel plates as we will spread our cooked mixture/batter on these plates. Greecing is optional as the batter can be spread without greecing plates too.
7. And once the batter is cooked we should immediately spread it on plates.
8. On low flame, cook this mixture for 10-12 minutes
9. And don’t leave this on flame, keep stirring it. And once the batter is ready spread on plates quickly.
10. Apply a very thin layer of batter and apply it on as many plates are required as once the batter turns cold, you will not be able to apply or spread it.
11. Now the thin layer or the sheet will take around 10 minutes to set.
Now lets prepare tadka till the time sheets are setting.
1. So lets first grate coconut with the help of a grater
2. Cut green chilies in thin long stripes
3. Now take a tadka pan, and on low flame add oil
4. Now add rai/mustard seeds and fry for 20 seconds.
5. Add green chilies and fry for 10 seconds
6. Add curry patta, grated coconut, coriander leaves and fry for 10-15 seconds.
7. Now turn off the flame
Cutting khandavi rolls
Now the batter that we spread must have been set
1. Just use knife cut the sheets vertically and roll out the sheets gently
2. Can spread tadka on sheets and than make rolls.
3. Can also make rolls without stuffing tadka.
4. Once all the rolls are ready, sprinkle the tadka generously on khandvi
5. Serve with aamchur chatni or dhaniya chatni
