This. is a Lebanese cake that's either called Namoura, Harisa, or Basbousa Cake. You can top this cake with either peanuts or almonds (I chose almonds). It's soaked in a homemade syrup and baked to perfection. INGREDIENTS Cake: 3 Cups Coarse Semolina (⁣to make it gluten free swap with amaranth flour, corn semolina, garbanzo flour, quinoa flour, or rice flour) 1/3 cup Powdered Sugar 1 Tbsp. Baking Powder ⁣ 1 tsp. Baking Soda ⁣ 1/2 cup Butter (to make vegan use a vegan butter) 1/2 cup Soy Yogurt ⁣ 2 Tbsp. Tahini ⁣ 1/3 cup Raw Peanuts / Almonds ⁣ Water to cover the peanuts ⁣ ⁣Syrup:⁣ 2 cups White Sugar ⁣ 1 cup Water ⁣ 1 tsp. Lemon Juice ⁣ 1.5 Tbsp. Orange Blossoms Water / Rose Water (optional)⁣ ⁣ INSTRUCTIONS Cake: 1. In a small bowl, cover the peanuts / almonds with water and set aside. (This prevents them from burning while baking.) 2. In a big bowl, add all of the dry ingredients & mix well.⁣ 3. Melt the butter and add that to the bowl along with the soy yogurt.⁣ 4. Mix well, but don’t over mix. 5. Line a nonstick rectangle or rounded sheet pan and brush with tahini. 6. Place the batter inside and spread it out evenly pressing with your palms (wet your hands to make a smooth surface).⁣ 7. Wet your knife, cut out square or diamond shape patterns. 8. Add one peanut or almond into each square and cover with plastic wrap and let it rest for one hour.⁣ 9. Remove the plastic wrap and brush the surface with more melted butter. 10. Bake at 350F/180C for 30 - 40 minutes until the surface is golden. Syrup :⁣ 1. In a small pot, add the sugar then the water. Don’t mix! 2. Add the lemon juice. 3. Place over the heat and with your hands hold the pan and move it in rounds so the sugar melts, but don’t use a spoon. 4. When you see all of the sugar has melted, let it boil for 7 minutes on medium heat. 5. Add in the orange blossom or rose water and let boil for another 4 minutes. (optional) 6. Turn off the heat and let it cool down.⁣ 7. When the Namoura Cake is baked and still hot, immediately pour the cooled syrup over it evenly.⁣ 8. Let cool for 2 - 3 hours⁣. 9. Enjoy!
