Believed to be prepared by the Mughal Khansamaas in the 18th Century , with herbs and Spices for great digestion , This Daha Vada recipe is perfect for those Tangy taste buds . As soft as cotton , Below is the Ingredients and Procedure : Ingredients : For Vadas : 1/2 Cup Urad Daal Oil to Fry For Chutney : 1/2 Cup of Good quality Tamarind Block for chutney 1 Cup Water (to boil the tamarind) 1 Teaspoon Red chilli Powder 1 Teaspoon Coriander Powder 1 Teaspoon Roasted Jeera Powder 2 Teaspoon Black Salt 3/4 cup Powdered Sugar / Jaggery / Khajoor (As per taste) 2 Tablespoon Grated Ginger For Yogurt Mixture : 3 Boxes of Creamy Amul Yogurt (600 gm in total ) 1/2 cup Milk to Dilute For Garnish : (Optional) Pomegranate Kernels Nylon Sev Namkeen Dhaniya Chutney Chilli Powder Roasted Jeera Powder Procedure: 1) Washed the Urad Daal thoroughly 3 Times with Tap water and Soak them in fresh mineral water for good 4-5 Hours. 2) After four hours , Strain all the water , transfer the daal into a Mixture and add 3 Tablespoon water and Grind in Mixer to a smooth fine paste. 3) Transfer the paste to a bowl and whisk the batter in one direction for ten minutes exactly , to bring air into the batter . 4) Add 2 tablespoon of Raisins in the batter . 5) Once the oil is hot , turn the flame to medium and Now fry the Vadas throughout in medium flame . insert a tooth pick to check if Vadas are cooked thru the center also , if it comes out clean then its ready to soak in water . 6) Prepare the Hing and salt water and Soak the fried Vadas in this water for only 15 minutes . 7) Prepare the Yogurt Mixture and whisk it so that no yogurt lumps are remaining .(Adding Salt or Sugar to yogurt mixture is totally optional) 8) Squeeze out the vadas extra water by pressing them between palm , Press with Light pressure , and dunk in yogurt mixture. For Tamarind Chutney: 1) Take Boil of Tamarind and 1 cup water , keep it aside to cool. 2) Once cool Press all the tamarind pulp and strain the pulp .Repeat this process 3 to 4 times with fresh water until all pulp is extracted . 3) Add all the spices mentioned above and grated ginger and sugar 4) Taste and add any additional spice as per your preference. Chutney Ready Dahi Vada Ready Voila !!!! Serve chilled and Hog on your dish Do Try this at home Lots of Love !!
